Hyderabad Dum Biryani is a culinary tradition that reflects centuries of history, royal kitchens, and a rich cultural fusion. Born in the kitchens of the Nizams of Hyderabad, this biryani is famous worldwide for its distinct flavor, aroma, and technique of preparation.
The slow cooking technique known as “dum” involves layering partially cooked basmati rice and marinated meat in a sealed pot. The end product is a royal, fragrant, and flavorful dish that is also filling and satisfying to the soul.

Ingredients for Cooking Hyderabad Dum Biryani

For the rice:

  • 2 cups basmati rice (aged variety preferred)
  • 5 cups water
  • 2–3 green cardamoms
  • 1 bay leaf
  • 1 small stick cinnamon
  • 3 cloves
  • Salt (to taste)

For the chicken marinade:

  • 500 g chicken/mutton (bone-in preferred)
  • ½ cup thick yogurt
  • 2 tbsp ginger-garlic paste
  • 2–3 green chilies (slit)
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 1 tsp garam masala or biryani masala
  • 2 tbsp lemon juice
  • A handful of mint leaves (chopped)
  • A handful of coriander leaves (chopped)
  • Salt (to taste)

For garnish & layering:

  • 2 medium onions (thinly sliced and deep fried until golden brown – birista)
  • 2 tbsp ghee (clarified butter)
  • 2 tbsp warm milk with a pinch of saffron strands soaked (or food-grade yellow/orange color as alternative)

Step By Step Process Of Hyderabad Dum Biryani

Step 1: Let the chicken marinate for Hyderabad dum biryani.

Clean the chicken and cut it into medium pieces. Mix all marinade ingredients and coat chicken well.
Refrigerate for at least one hour (overnight for best results) with a cover.

Step 2: Parboil the rice.

Rinse the rice well and soak it for 30 minutes. Salt and whole spices simmer in water. Cook the soaked rice until it is 70% done (the grains should be firm but not completely cooked). Discard after draining.

Step 3: Layering the dum setup for Hyderabad Dum Biryani

Spread the marinated chicken evenly across the bottom of a heavy-bottomed pot or handi. Add some mint, coriander, and half the fried onions on top. Over the chicken, distribute the half-cooked rice evenly. Top with the remaining fried onions, ghee, and saffron milk.

Step 4: Sealing & cooking on dum

Seal the pot tightly with dough (atta) or a heavy lid to trap steam. Place in a low oven and cook for 30 to 40 minutes. Before opening it, let it rest for ten minutes.
